Find me a more colourful dinner?
This spicy coconut chicken noodle soup is the perfect wintery warmer, but that garnish still makes you feel like it’s summer.
I always really appreciate a healthy dish that doesn’t feel too boring as I’m the world’s worst healthy eater and would usually rather drown myself in pasta. But I have to say this one is a real treat!
Super easy to make and can be easily customised to what you already have the in fridge. Chicken can be switched out for prawns, tofu or veg and the garnish can adapt to whatever veg, herbs or added extras you have laying about.
We made a slightly easier version as we didn’t create the paste from scratch and we didn’t have everything we needed for the garnish but it was still super tasty 😋
